King Trumpet Mushrooms (Pleurotus eryngii), also known as King Oyster mushrooms, are the largest variety in the oyster mushroom family. Recognised for their thick, white edible stems and small brown caps, they are prized for their rich umami flavour and firm, meaty texture. Often called “vegan scallops,” they hold their shape beautifully when cooked, making them an excellent plant-based alternative in hearty dishes.
Use Cases: Perfect for grilling, searing, roasting, and stir-frying. Slice them into rounds to create scallop-style medallions, cut lengthwise for mushroom steaks, dice into pasta and risotto, or shred for plant-based pulled preparations. They pair exceptionally well with garlic, thyme, butter, soy sauce, sesame, and bold marinades, absorbing flavours while maintaining a succulent bite.
