Ingredients

  • 1/2 kg chicken
  • 6-8 green chillies
  • 5 garlic
  • 2 cup coriander
  • ⅔ cup mint
  • 1 cup yoghurt
  • 6 tbsp vinegar
  • ¼ cup oil
  • 2 tsp black pepper
  • Salt

Instructions

  • Let's begin the recipe of green chicken. Blend garlic, coriander, mint, green chillies, yoghurt, and vinegar in a blender. You have to get the right consistency from the mixture by using the least amount of water possible.
  • This paste will constitute the base of your dish, with which you'll marinate the chicken with robust flavours. Set this mixture aside until needed.
  • Use oil on medium-high heat in a wok or pan.
  • Once the oil is hot, put the chicken pieces in. Allow the chicken to stay in that pan for some time.
  • It will start gaining some colour; begin to sprinkle salt over the pieces when you notice the chicken starts gaining some golden brown colour.
  • Salt will help the flavour turn out better and keep the chicken moist. Continue cooking the chicken until there is no pink colour in the middle, and it is very dark brown.
  • Pour the prepared green mixture over the chicken in the pan. Fold well together, getting all pieces of chicken wet with the fragrant mixture.
  • Heat the mixture over high, stirring frequently so that it does not stick.
  • It will thicken as it cooks, where the amazingly bright green colour coats the chicken and looks almost appetizing.
  • Once you achieve the right consistency of your mixture, flavour it with your chosen flavours.
  • If you want a more pointed flavour profile, you could add coarsely ground black pepper.
  • Salt and pepper, too, are to be adjusted according to your taste.
  • This final seasoning is a must as it will give your dish the correct balance of flavours before moving on to the next processes.
  • Of course, how saucy you want your Green Chicken is entirely up to you. If you like it drier, continue to cook until it feels the consistency that you want it to be like the pictures you have viewed.
  • If you desire it to be saucier, you need to add only a bit of water.
  • Stir well and cook until the sauce reaches a gentle simmer over medium heat. This allows the flavours to blend while retaining moisture.
  • Drain off any oil which will have risen to the surface before serving.
  • This will make the dish look much cleaner and eliminate the odour of grease.
  • Pour hot over the Green Chicken, garnished with coriander or mint if you prefer.
  • To be served with steamed basmati rice or naan/paratha, it would be the most significant focal point of any meal.
  • The shot of flavours accompanied by the aromatic scent of herbs will delight every bite.
