Paneer bhuna, a rich, flavorful dish that's all about bold spices and juicy, golden-paneer vibes. “Bhuna” means slow-cooked with love, and trust me, this dish brings all the cozy feels with its deep, aromatic flavors. Whether it's a special dinner or a quick indulgent fix, paneer bhuna is the dish that always hits right. A classic paneer bhuna recipe starts with soft paneer cubes, lightly pan-fried for that golden crust. The magic happens in the masala base think saut ed onions, tomatoes, ginger, garlic, and a mix of warm spices like cumin, coriander, turmeric, and garam masala. Cook it slowly to intensify those flavors, letting the spices and paneer come together in a thick, rich gravy that coats every bite. It's versatile AF. You can pair it with buttery naan, flaky parathas, or even a bowl of steaming jeera rice. Garnish with fresh coriander and a squeeze of lemon for that zesty finish, and you've got yourself a dish that's hearty, indulgent, and totally drool-worthy. Loaded with flavor, easy to whip up, and always a crowd-pleaser, paneer bhuna is the perfect way to turn up the heat in your kitchen. Ready to stir, simmer, and savor? Let's get cooking!

Instructions

  • Let's whip up some spicy, indulgent magic with this paneer bhuna recipe—it's bold, aromatic, and totally irresistible. Perfect for a cozy dinner that feels gourmet without breaking a sweat!
  • In a large kadai, heat 2 tablespoons of oil and 2 tablespoons of ghee to kick things off.
  • Toss in your spices—1 teaspoon cumin, 1 bay leaf, 3 cardamom pods, and 1/2 teaspoon cloves—and saut on low heat until your kitchen smells like pure heaven.
  • Next, add 2 finely chopped onions and 1 tablespoon of ginger-garlic paste. Saut this mix until the onions turn beautifully golden and caramelized.
  • Now, sprinkle in 1/2 teaspoon turmeric, ¾ tablespoon chilli powder, 1 teaspoon coriander powder, 1/2 teaspoon cumin powder, and 1 teaspoon salt. Keep stirring on low heat until the spices turn aromatic.
  • Chop up 2 juicy tomatoes and add them to the mix. Saut until the oil begins to separate from the masala, creating a rich, flavorful base. Stir in 1/2 teaspoon curd and keep cooking until the oil separates again, ensuring the masala is next-level tasty.
  • Gradually add ¼ cup of hot water in three batches, letting it cook down each time until the oil separates. This slow process makes the masala perfectly cooked and silky.
  • In a separate pan, heat 1 tablespoon of ghee and stir fry 1/2 a capsicum and 1/2 an onion on high flame for a quick crunch. Toss in 25 cubes of paneer along with ¼ teaspoon turmeric, 1/2 teaspoon chili powder, 1/2 teaspoon garam masala, and 1/2 teaspoon salt. Stir fry until the spices hug the paneer like they're made for each other.
  • Transfer this spiced-up paneer mix over the curry masala and gently fold it all together. Cover and let it simmer for 5 minutes so the flavors get cozy and absorbed.
  • Finish it off with a sprinkle of 2 tablespoons kasuri methi and 2 tablespoons freshly chopped coriander for that final burst of flavor and aroma. Serve this delicious paneer bhuna hot with soft rotis or buttery naan, and watch it become the star of your table. This recipe of paneer bhuna is rich, bold, and totally worth every bite!
