Now, let's go through the preparation of these delicious kababs that are going to be simply perfect for a party appetiser, or even a snack with the tea, or as a healthy meal option.
- 4
Let's start by gathering all the ingredients. These are: 1 cup India Gate quinoa, 1 cup mixed vegetables, that may be carrot, peas, and bell peppers, 1 cup of palak or spinach, a bunch of fresh coriander leaves, 1 teaspoon chaat masala, 2 Tbsp oil for shallow frying, 2 cups water, one medium boiled potato, 2 green chillies, 2 Tbsp cornflour, 0.5 Tsp garam masala, and salt, according to your taste.
- 5
All these, once prepared, make the cooking process much easier and even more fun.
- 6
Wash the quinoa well in cold running water to remove its bitterness. It must be rinsed because it is the process that determines how delicious the final dish is going to be. After rinsing the quinoa, add 2 cups of water to the pot. Boil the water.
- 7
Add to low heat, cover it, and continue to simmer for around 15 minutes till the quinoa is fluffy and the water absorbs.
- 8
Once cooked set aside and cool.
- 9
Chop the mixed vegetables and palak can be fresh or frozen, whatever you have on hand. If fresh vegetables are being used, chop them fine to be well-cooked.
- 10
In another pan, blanch the palak with a little amount of water and continue till it's wilted. Drain the blanched palak and transfer it to an ice-cold water bath to keep the appetizing green colour. Let it get cooled down; drain again, and chop the palak finely.
- 11
Together in a large bowl, the cooked quinoa, blanched palak, and mixed vegetables were put together. Add to this the mashed boiled potato.
- 12
The potato acts as a binder, hence giving shape to the kabab. The green chillies are finely chopped and added along with the coriander leaves, whose flavour is very refreshing. Add the chaat masala, garam masala and salt. Mix everything well until well combined.
- 13
Add 2 tablespoons cornflour to the mixture. This will ensure that the kababs do not separate during frying and make the kababs crispier when fried. Mix very well so that the cornflour is well mixed with the kabab mixture.
- 14
Now is the time to shape the kababs. Grease your hands in a little oil to avoid sticking to the mixture.
- 15
Take a small portion of the mixture, and by spreading it uniformly between the palms, shape it into flat round patties of even thickness so that they are evenly cooked. Place the shaped kababs on the plate while you are getting ready to fry them.
- 16
Take 2 tablespoons of oil in a non-stick pan and heat over medium flame. Once the oil is hot, place the kababs in the pan, taking utmost care not to overcrowd them. Fry on each side until golden brown and crispy for about 3-4 minutes. The aroma of spices will fill your kitchen. Everyone nearby will just get attracted to it.
- 17
So, after cooking the kabab, remove it from the pan and put it on a paper towel to drain any excess oil. Serve the quinoa hara bhara kababs hot with accompaniments of green chutney or yoghurt for dipping.
