  • 1 cup mixed vegetables
  • 1 cup quinoa
  • Coriander leaves
  • 1 tsp ginger garlic paste
  • 1/2 tsp cumin seeds
  • 1/2 tsp red chilli powder
  • 1 medium tomato
  • 1/2 tsp turmeric powder
  • 1 medium onion
  • Salt
  • Lemon

Instructions

  • Here is the recipe of quinoa tawa pulao. Prepare the vegetables first.
  • A mix of carrots, bell peppers, peas, and green beans will give you a balanced flavour with texture. Chop them uniformly so that they are the same size for uniform cooking.
  • Chop the vegetables and steam or boil them till just tender. Refrain from overcooking As they are better with some crunch for texture in the final product.
  • Once cooked, drain excess water and set the vegetables aside.
  • Heat 2 Tbsps of oil in a large pan or skillet on medium heat.
  • Once the oil is hot, add 1 Tsp of cumin seeds (jeera) and let them sizzle and turn golden brown. This infuses their flavour in the oil that enhances the gravy.
  • Add chopped onions to it. Saut till they turn golden brown. Stir occasionally so that they get cooked evenly.
  • The onions add a pleasant sweetness and slightly caramelised flavour.
  • Once the onions are ready, add the chopped tomatoes and 1 Tsp of ginger-garlic paste to the pan. Fry this mixture until tomatoes are soft and blend well with onions. This will create a deep, savoury base for the dish.
  • Now add the dry spices: 1/2 Tsp turmeric powder, 1/2 Tsp red chilli powder, and 1/2 Tsp garam masala.
  • Now mix well and allow it to cook for about a minute. This would enrich the flavour profile, making the warm and aromatic spice blend to the stir-fry.
  • Add steamed vegetables into that pan with the spice mixture, and cook them gently for 4–5 minutes to suck out all the flavours from spices and onions.
  • Saut ing is done to infuse all flavours with those vegetables.
  • Add the cooked quinoa with vegetables to the pan. The nutty flavour of quinoa nourishes its spiced vegetables. Stir everything gently so as not to mash the quinoa and vegetables.
  • Taste the mixture and add seasoning if needed.
  • It could be garnished with fresh chopped coriander leaves, curry leaves or kasuri methi.
