The vegetable sandwich is the most sought after and cooked dish in the world. Called a variety of things in local languages, putting ingredients between pieces of bread seems to be the easiest meal to put-together. The versatility of the sandwich is unmatched. However, most sandwich recipes include meat or eggs and while there is nothing wrong with that, we need vegetarian options too. Apart from the standard cheese, butter and mayonnaise, the Indian subcontinent has its own little treasure of vegetable sandwich recipes. Considering that we have access to a variety of spices, vegetables and dairy options, the Indian vegetable sandwich is worth trying. Of course, you would have had a vegetable sandwich recipe that is usually used but it may be time to mix things up a bit. This recipe for the vegetable sandwich can be used for breakfast, school pack lunches, light dinners or even snacks for tea time. The recipe is very forgiving and you can add or subtract ingredients to the recipe as per your preferences.

Ingredients required for Vegetable Sandwich

  1. 4 slices bread
  2. 2 tbsp butter
  3. 6 tbsp cooking oil
  4. 1/2 tsp cumin seeds
  5. Turmeric
  6. Salt
  7. 2 green chilies
  8. 1 large tomato
  9. 1 small onion
  10. 1/2 capsicum
  11. 1 small carrot
  12. 3 tbsp corn
  13. 4 beans
  14. 1/2 tsp garam masala
  15. 2 tbsp coriander leaves

Cooking steps for Vegetable Sandwich

    Wash and finely chop all your vegetables. The smaller the pieces, the faster the filling cooks.

    To a fry pan, add butter and cumin seeds.

    Once the cumin seeds begin to sputter, add the crushed garlic and saute until it loses its raw smell.

    Next, add finely chopped tomatoes, salt and red chili powder. Cover the mix and leave it on a low flame till the tomatoes are soft and mushy.

    Add all the chopped vegetables and garam masala and saute the mixture until the vegtables are soft enough to your liking. Some prefer their filling to be on the raw side and it would be perfectly fine to simply stir the vegetables in the tomato mix and remove the pan from the flame.

    Once done, sprinkle coriander leaves and set aside to cool slightly.

    While the filling cools, butter slices of bread and grill them on a stove-top. Once they are crisp, add the filling between two slices of toast.

    If you are using a toaster or a sandwich maker, butter the slices of bread, spread as much filling as you wish between two or three slices of bread and place in the toaster.

    Remove from the sandwich maker in about 4 minutes and your sandwich is ready to be eaten.

    Cut the sandwich into desirable pieces and serve with tomato sauce, mayonnaise or chutney of your choice.
