The dish would be the epitome of crispy-soft texture and melted richness of cheese, along with some fiery flavour of green chillies. It's also widely opted for breakfast, lunch, or dinner. This dish is quick to make, incredibly satisfying, and has flavours bursting. Prepare dough like paratha dough using whole wheat flour, water, and a pinch of salt. Then comes the filling: grated cheese-most preferably mozzarella or a combination of cheddar and mozzarella for that perfect melt, finely chopped green chillies for heat, and some spices added, such as cumin powder and black pepper. This dough mixture is then stuffed into the dough and rolled out into flat circles, which would then be cooked in a hot skillet with considerable ghee or oil to achieve that crisp golden texture. The perfect balance of flavours and textures makes Chili Cheese Parathas unique. The cheese melts beautifully inside the paratha to create a gooey centre reminiscent of melted goo with savoury bits to contrast against the crisp exterior layer. The green chillies burst with heat at each moment, giving the whole bite of parathas an extremely flavourful yet not overwhelmingly spicy moment. It's best consumed hot off the grill with a dollop of cooling yoghurt, tangy pickle, or side chutney.

  • 1 cup grated cheese
  • 1/4 cup coriander leaves
  • 2 cup wheat flour
  • 1/2 tsp chaat masala
  • 1 pinch salt
  • Ghee
  • 1 green chilli
  • 1/2 tsp red chilli powder
  • 1 tsp sugar

Instructions

  • Let's begin the recipe of these chili cheese parathas. Start with 2 cups of whole wheat flour in a big mixing bowl. Add a pinch of salt to it to enhance flavour. Add water to the flour and start kneading the dough. The dough must be soft. After preparing the dough, keep the bowl on a moist towel for resting for approximately 15-20 minutes. This resting time allows it to become more wonderfully easier to roll out.
  • In the meantime, proceed to prepare the filling. In a bowl, crush 1 cup of grated cheese, for example, mozzarella or cheddar, to give it this creamy texture. Now add one finely chopped green chili to the filling so that it carries a mild tinge. Add 1/4 cup of finely chopped coriander leaves so that the paranthas have a fresh feel to them as well. Add 1/2 teaspoon red chilli powder to give it some chillies and 1/2 teaspoon chaat masala to add a tangy, spicy flavour.
  • Mix all these ingredients, such as chilies, and the flavour is well distributed everywhere. This will be the cheese stuffing for your paratha, giving a paratha an indulgent taste.
  • It is the time when you divide the dough into 6-8 parts of equal portions. Roll them into small balls. Take one ball, and then it with chilli palms or a rolling pin into a small circle. Put a generous amount of this stuffing in the centre of the circle. Fold up the dough very carefully to seal the inside stuffing to form a ball. Press with your palms and roll it again to a slightly thicker circle. Don't press too hard, or the filling may spill out.
  • Repeat with the rest of the dough balls.
  • Now, let's roast the stuffed parathas. Place a tawa or non-stick pan on a medium flame. When the pan is hot, place the rolled-out paratha on it. Roast till you see golden brown spots forming on one side; that would mean it is cooked through. Flip the paratha and similarly cook the other side. Once both sides have a nice golden-brown finish, you may add some ghee or oil on both sides of the paratha and cook for one more minute so that it can turn crispy and yummy.
