Ingredients

  • 3/4 cup maida
  • 3/4 cup brown sugar
  • 1/2 tsp cinnamon
  • 6 tbsp unsalted butter
  • Salt
  • 2 cup white sugar
  • 2 large eggs
  • 3/4 cup plain greek yoghurt
  • 1/4 cup coffee
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 175 C or 350 F. Grease your 9-10 inch springform pan with 1-2 Tbsp butter and sprinkle it with flour not to let it stick.
  • In a medium bowl, combine the flour, brown sugar, cinnamon and salt. Then add cold butter cubes and use your fingers to rub the butter into the mixture until it resembles coarse crumbs. Place the streusel mixture in the refrigerator so that it chills while you prepare the cake batter.
  • Whisk together 2 cups of all-purpose flour, salt, baking powder, and baking soda in a small bowl. Set aside.
  • Use your hand mixer in a large mixing bowl to cream the softened butter and sugar until it's fluffy and light, approximately 2-3 minutes. Then, add one egg at a time and mix well after each addition. You'll then add the Greek yoghurt, vanilla extract, and cold brew coffee. Mix at low speed until everything is combined and smooth.
  • Stir the dry ingredients with a low-speed mixer until just combined. Be careful not to overmix.
  • Pour half the batter into the prepared springform pan. Sprinkle half the chilled streusel mixture evenly over the batter. Pour the rest of the batter over the streusel and top with the rest of the streusel mixture.
  • Bake the cake for 40-60 minutes.
  • Check it for doneness at the 40-minute mark. Stick a toothpick in the center-it should come out clean when the cake is done.
  • Remove from pan and allow the cake to cool on a wire rack.
  • Mix the icing sugar, vanilla extract, and cold-brew coffee well in a small bowl till it becomes smooth. Pour over the top of the cake when the cake is cool.
  • Cut the coffee cake and warm it, or set it aside at room temperature to enjoy cooling down. Serve teamed with a nice cup of hot coffee or tea; this makes it perfect for any kind of gathering or as a special comfort in your place.
