  • 300 gms boneless chicken
  • 2 tbsp yoghurt
  • 1/2 tsp salt
  • ¼ tsp black pepper
  • 2 tbsp cooking oil
  • 1 sprig curry leaves
  • ¼ tsp cumin seeds
  • 1 onion
  • 1 tsp red chilli powder
  • 5 garlic cloves
  • ¾ tsp vinegar
  • 1 tsp sugar
  • 1-2 tbsp coriander leaves

Instructions

  • This recipe of Garlic Chicken is so flavourful, combining tender chicken with aromatic spices and a hint of tanginess.
  • Begin with 300 gms of boneless chicken, cut into strips or half-inch cubes or a size that ensures quick cooking.
  • Prepare the marinade.
  • In a mixing bowl, place two tablespoons of yoghurt, add to this ¼ teaspoon of salt and ¼ teaspoon of ground black pepper.
  • Add the chicken pieces to the marinade and ensure that the marinade coats every piece of chicken. Leave the chicken to marinate for almost 30 minutes.
  • This allows the chicken to be coated with the flavours from the marinade and tenderise the meat.
  • While the chicken is marinated, prepare all the other ingredients you are going to use.
  • Heat 2 tablespoons of oil in a heavy-bottomed pan over medium heat.
  • Once the oil is hot, add a sprig of curry leaves. The leaves will crackle in the oil, releasing their aromatic essence.
  • Add ¼ teaspoon of cumin seeds and let it sizzle for a few seconds until fragrant.

  • Finally, add the marinated chicken to the pan.
  • Stir all together, ensuring the chicken is covered by the onion and garlic mixture.
  • Cook over medium heat for about 8 to 10 minutes, or until cooked through and the chicken is no longer pink in colour inside.
  • Meanwhile, combine ¾ teaspoon vinegar,1/2 to 1 teaspoon sugar, and ¼ teaspoon salt in small bowl.
  • The addition of vinegar leaves the tangy taste, which will balance the entire dish, and sugar enhances the general taste of the food.
  • Once the chicken is cooked, add the vinegar mixture. If it looks very dry, add 15 to 30 ml of water —the less, the better.
  • Simmer for a further 2-3 minutes, allowing the flavours to mingle.
  • It should cling to the chicken and make it juicy and flavourful.
  • Finally, turn off the heat and garnish your Garlic Chicken with 1 to 2 tablespoons of fresh coriander leaves for some colour and freshness.
  • Serve your chicken accompanied by onion wedges or rings, along with lemon wedges-they'll add a nice acidity to enhance the flavours.
