  • 500 gms cauliflower
  • Dairy cream
  • Ginger garlic paste
  • Salt

  • 1 tsp cumin seeds

  • 1 tsp coriander powder
  • Red chilli powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala
  • Coriander
  • Cooking oil

Instructions

  • To make a delicious recipe of gobhi masala, start by washing and cutting 500 gms of fresh cauliflower into small florets.
  • Once you've allowed the florets to steam, heat two tablespoons of oil in a pan over medium heat. As the oil smokes, sprinkle 1 teaspoon of cumin seeds in it and let it splutter so that warm, aromatic scents can spread, thereby setting the tone for the dish.
  • Now, add 1 finely chopped large onion to the pan and saut until golden brown. This is an essential step as caramelized onions provide the flavour base of the dish.
  • Once the onions are done, add in 1 tablespoon of ginger-garlic paste. Saute the mixture for approximately a minute so the raw smell of it disappears and melds perfectly.
  • Add the 2 finely cut medium-sized tomatoes in later. Let the mixture cook until it softens and starts to break down into a mushy consistency, then the mixture turns into a nice sticky base for the spices to stick to.
  • When the tomatoes are completely set, the dish needs depth, and it does so with the addition of 1/2 teaspoon of turmeric powder, 1 teaspoon of red chili powder, 1 teaspoon of coriander powder, and 1/2 teaspoon of garam masala. Heat this spice mix for 2-3 min while stirring well to ensure the spices blend well with the onion-tomato concoction, releasing their full flavours.
  • Now, once your spice mix is well and fragrantly blended, add the prepared cauliflower florets to the pan. Toss the florets gently so that they are well coated with the masala, and then let the spices soak deep into it.
  • Then add 1 cup of water and salt to taste. Close the pan for 10-12 minutes and cook till this is tender and check every few minutes. The cauliflower florets will be tender, yet still retain their form without turning mushy.
  • Once the cauliflower is soft, you pour in 1/2 cup of fresh cream. The richness it adds to the dish together with the silky texture which contrasts with spice and sweetness makes it all the better.
  • Simmer the mixture for another 2-3 minutes so that the cream can mix with all the flavours in there.
  • Once all the ingredients are mixed and hot, you are ready to serve. Sprinkle some fresh coriander leaves to add a splash of colour and freshness; The cauliflower preparation is best enjoyed hot with some warm roti, naan or fluffy rice, which makes for a very comforting meal.
