Mutton kofta is the richest and most flavoursome dish. This authentic recipe from Indian and Middle Eastern cannot be resisted. Bringing spice and herbs in perfect harmony with the ground mutton, the mutton kofta recipe produces heavenly satisfaction and indulgence in a dish. Mix up mutton with finely chopped onions, ginger, garlic, and a blend of cumin, coriander, garam masala, and red chilli powder. Fresh coriander or mint leaves make it refreshing. The mixture is then shaped into small, round, bite-sized balls, shallow-fried or deep-fried, and then gently simmered in rich gravy. The gravy is made with a base of onions, tomatoes, and yoghurt, flavoured with the warm spices of cinnamon, cloves, and cardamom. Koftas are cooked in this sauce until soft and have all the gravy flavours. Mutton kofta, as desired on any occasion or family get-together celebrations, is always enjoyed piping hot, preferably served with naan, roti, or even steamed rice. This mutton kofta recipe is a big hit because it brings the meatballs together into a delicious mixture along with the profoundly spiced gravy, creating a perfect balance between texture and taste. This evergreen dish from among traditional mutton recipes is something to look out for.

Ingredients

  • 1/2 kg mutton
  • 1 eggs
  • 2 tbsp chana
  • 2 tsp coriander leaves
  • 1 tbsp poppy seeds
  • 15-20 garlic pods
  • 1 1/2 inch ginger
  • 4 onion
  • 4 tomatoes
  • 2 tsp coriander powder
  • 1 tsp turmeric
  • Salt
  • 1 1/2 cups yogurt
  • 1 cup cooking oil
  • 5 green cardamom
  • 1 tsp whole pepper
  • 5-6 cloves
  • 2 bay leaves
  • 1 inch cinnamon stick
  • 2 black cardamoms

Instructions

  • This recipe of Mutton Kofta is really something that will become a legacy! To kick things off, grab 1/2 kg of finely minced mutton and toss it into a large mixing bowl.
  • Crack in one egg to keep the koftas nice and smooth, then mix in 2 tablespoons of roasted and ground chana flour.
  • Trust me, this little addition is the key to perfectly firm koftas that hold their shape like a pro.
  • Now for some flavour magic: add 2 teaspoons of freshly chopped coriander and a tablespoon of soaked poppy seeds.
  • That little crunch from the poppy seeds? Chef's kiss.
  • Let's not forget the heavy hitters—finely chop about 15-20 garlic pods and a 1 1/2-inch piece of ginger, then mix them into the meat for that bold, punchy base.
  • Add salt to taste and get your hands in there (clean hands, of course) to mix everything until it's a smooth, well-blended dream.
  • Roll the mixture into small balls, about golf ball-sized, and set them aside while you whip up the gravy.
  • For the gravy, heat a generous cup of oil in a deep pan over medium heat.
  • Once hot, toss in 2 black cardamoms, 1 teaspoon of whole pepper, 5-6 cloves, 2 green cardamoms, 2 bay leaves, and a cinnamon stick.
  • The aroma is going to make your kitchen smell like a five-star restaurant.
  • After about a minute, add 4 sliced onions and saut them until they're golden brown and caramelized.
  • This is the base of your gravy, so take your time to get it just right.
  • When the onions are beautifully browned, add in 4 pureed tomatoes and stir.
  • Sprinkle in 2 teaspoons of coriander powder and 1 teaspoon of turmeric for that deep, earthy flavour and a rich, golden hue.
  • Let this cook down until the oil starts to separate—this is your sign that the masala is perfectly done.
  • Now, slowly mix in 1 1/2 cups of whipped yogurt.
  • The yogurt is what makes this gravy next-level creamy and tangy.
  • If it's looking a little thick, add a splash of water to get that perfect consistency.
  • Once your gravy is bubbling away, gently drop in those koftas, making sure they're evenly spaced so they don't stick together.
  • Let them simmer over low heat for 15-20 minutes, soaking in all those flavours while they cook through.
  • The gravy will thicken slightly, and the koftas will turn tender and juicy.
  • Before you call it done, give the gravy a taste test and adjust the seasoning if needed.
  • Sprinkle on some fresh coriander for that final pop of colour and herbaceous freshness.
  • Serve his delicious mutton kofta hot with buttery naan or a steaming bowl of rice.
