The pieces of fresh paneer cubes marinated with yoghurt, red chilli powder, garam masala, turmeric, and a whisper of lemon juice give it a taste while roasting it until it's golden brown and a bit charred, giving it that smoked flavoured. It is then sandwiched between toasted bread slices, often accompanied by fresh veggies like cucumber, onion, and lettuce, but the mint chutney or mayonnaise spread completes it. Ingredients

  • 2 cups paneer
  • 1 tbsp oil
  • 1 tsp garam masala
  • 1 cup onion
  • Salt
  • 1 tbsp tomato sauce
  • 1 slices bread
  • 2 tsp red chilli powder
  • 1 tsp butter

Instructions

  • Heat 1 Tbsp of vegetable oil in a large skillet over medium heat.
  • Once the oil is hot, add a cup of finely chopped onions and saut , stirring occasionally, until they soften and begin to turn golden.
  • Add 2 Tsps of red chilli powder to bring out some heat, a Tsp of garam masala to add its warm, fragrant flavoured, and a Tsp of ground turmeric for the beautiful golden colour and rich earthy flavoured.
  • Add 1 Tsp of white sugar to help balance the spices and a pinch of salt to taste.
  • Stir the mix well, allowing the spices to toast lightly in the oil for about 1 minute, which helps release their essential oils and intensifies their fragrance.
  • With the spices mixed and combined with the onions, it's now time to add the main ingredient- the paneer.
  • Add the cubed paneer to the skillet and stir gently so that it is entirely coated with the spiced mixture.
  • Mix the 1 Tbsp tomato sauce with the filling for a slight tang and moisture content.
  • Further, cook and stir this mixture for 3 to 5 minutes so that everything gets well combined; the Paneer will brown at the edges and be crispy.
  • Meanwhile, prepare your bread. Take two slices of whatever bread you're using, whole wheat or even multigrain, and spread 1 Tsp of butter on one side of each.
  • The butter will add richness and help the bread crisp up nicely when toasted.
  • After buttered bread, spoon around 2 Tbsps of the hot, spiced paneer, fill it onto one slice of bread and spread it out evenly. It should be lavishly spread because, after all, it is the star of this sandwich.
  • Place the second slice of bread at the top, buttered side outwards. Now toast the sandwich.
  • In the pan that you just used to cook the filling of paneer, put the remaining 1 Tsp of butter over medium heat.
  • Lay the sandwich in the skillet when the butter has melted and the pan is hot.
  • Cook the sandwich for about 1 minute per side, pressing gently with a spatula to ensure even toasting.
  • You should want your bread to turn golden brown and crispy, with a filling inside that is hot and slightly melty.
  • Remove the sandwich from the skillet after roughly 2 minutes of cooking.
  • Allow it to cool down a bit before halving or quartering it.
  • Serve the sandwich hot with your favourite dipping sauce or chutney and enjoy even a complete meal with a side salad.
