  • For those fabulous layers, you will need food colouring in red, orange, yellow, green, blue, and purple. For frosting, you will mix one cup of softened unsalted butter, four cups of powdered sugar, 2 to 4 Tbsp heavy cream or milk, and one teaspoon of vanilla extract.
  • Optionally, you can use even more food colouring to decorate and add rainbow sprinkles to make it more festive. First, preheat your oven to 350 F or 175 C.
  • Grease three 9-inch round cake pans with butter or cooking spray and line the bottoms with parchment paper. Whisk together the flour, baking powder, and salt in a medium bowl. In a large mixing bowl, with an electric mixer at medium speed, cream the softened butter and granulated sugar until light and fluffy-3 to 5 minutes.

  • Remove the cakes from the pans and let cool on wire racks for about 10 min. Let them cool completely. In a large mixing bowl, cream soft butter. Gradually add powdered sugar and mix with low speed until well combined.
  • Then add heavy cream and vanilla extract, and beat at high speed for about 3-5 minutes until the frosting is light and fluffy.

  • Once your layers cool, it's time to build the cake, so start with the purple layer on a serving plate spread atop the first layer of frosting, then the blue layer.
