The name "Sulaimani" is derived from the Arabic word "Sulaiman," or the prophet Solomon, representing wisdom. It is said to have originated initially in the royal courts of the Arabian Peninsula before moving on to the shores of India. The simplicity and flexibility of Sulaimani chai make it really special. Masala chai is often richer and creamier, thanks to the milk that is added, in comparison, but the sweet flavour of Sulaimani chay, with undertones from cardamom, cloves, or cinnamon, with a squeeze of fresh lemon juice for added bite, can be rivalled by no other. It's sweetened with sugar or jaggery but can always be modified to the individual's taste. Variations come in with a dash of ginger or mint leaves and refreshing zest.     Fill a medium-sized pot with 1¼ cups of water and place it over medium-high heat. This quantity is good for one large serving or two smaller cups.
