  • 1 tsp ginger garlic paste
  • 1/4 cup tamarind water
  • 1 tsp red chilli powder
  • 1.5 tsp coriander powder
  • 2 tsp coriander leaves finely chopped
  • Salt
  • 1/2 tbsp chana dal
  • 2 red chillies
  • 1/4 cup coconut
  • 1/2 tsp fennel
  • 3 tsp oil
  • 1 tsp mustard seeds
  • 1/2 tsp urad dal
  • Curry leaves
  • Mint leaves

Instructions

  • The first step to making tasty and fragrant South Indian recipe of muttai kulambu is to collect all the ingredients. You will require in this recipe 2 eggs, which will serve as the source of protein, and 1 small-sized big onion, finely chopped, along with 1 small-sized tomato, which is relatively roughly chopped. It forms the base of the curry. Start by boiling the eggs.
  • Usually, this takes 8-10 minutes in order to get them to a hard-boiled state. Once it's done, quickly put them into a cold water bath, which helps the shells peel off the eggs better. Peel the eggs and put them to one side for now as you prepare the rest of the curry.
  • Now get 3 teaspoons of oil heated up in a pan, over medium heat. Once the oil starts smoking, add a teaspoon of mustard seeds and let them splutter with their nutty aroma.
  • Let it settle a little and then add 1/2 teaspoon of urad dal and roast until golden brown. Add a few curry leaves and a few mint leaves; they infuse the oil with fragrance. This tempering lays the flavour base of your curry.
  • Now, let's prepare the grinding mixture and while the tempering is roasting. In a blender take: 1 roughly chopped onion, 2 roughly chopped tomatoes, 1/2 tablespoon of chana dal, 2 red chillies, ¼ cup of coconut, and 1/2 teaspoon of fennel seeds.
  • Add in a little water which will help you blend and then grind this mixture to a smooth paste. This group of ingredients will create a rich, fragrant curry.
  • Now add the mixture to the pan and cook over medium heat. Saut for about 5-7 minutes until the raw smell disappears and oil starts to separate from the masala. This step ensures that flavours are fully developed. Now, add 1 teaspoon of ginger-garlic paste and saut for another minute allowing the flavours to come together.
  • Add in the roughly chopped tomato to the mix and cook until it wilts. Upon the breaking down of the tomatoes, add in ¼ cup of tamarind water. The tartness cuts through in such a way that one can hardly find elsewhere; if at all, because of the richness of coconut and spices, allowing the mix to caramelize to perfection. Stir well and simmer this mixture over about 5 minutes so the flavours blend well and smoothly.
  • Now comes the seasoning of the curry. Add 1 teaspoon of red chili powder, 1.5 teaspoons of coriander powder, and salt to taste. Mix everything well so that the spices spread uniformly over the sauce.
  • Let it simmer for a few minutes. When it has been simmering for a while, put the boiled eggs gently inside the curry so that they absorb all the flavours. Either you can leave them as it is or cut them in half, which will look more attractive. For another 5 minutes, cook the curry to let the eggs absorb the sauce to make it perfectly rich.
  • Finally, garnish the muttai kulambu with 2 teaspoons of freshly chopped coriander leaves which will add freshness and colour to the dish.
  • Serve muttai kulambu hot along with steamed rice or soft chapatis.
